Flavorful Friday - Banana Chocolate Chip Muffins

I grew up in the kitchen with my mom. She is a wonderful cook, and when I had a child of my own, I looked forward to passing on the tradition.

So it thrills me that my own daughter loves to be in the kitchen with me helping me cook. That excitement is enhanced when we are making something she really loves. When I suggested we try this recipe, we could not get the ingredients out fast enough...

1/3 cup unsalted butter, softened
3/4 cup brown sugar
1 egg
3 ripe bananas, mashed
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla
1 1/4 cup flour
1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups chocolate chips

Preheat oven to 375
Spray 12 muffin cups with nonstick baking spray containing flour
In large bowl, combine butter and brown sugar; beat well.
Add egg, banana, cinnamon, nutmeg, and vanilla.
Add flour, baking powder, baking soda; beat until combined.
Stir in chocolate chips.
Fill prepared muffin cups three-quarters full.
Bake 18 to 22 minutes, until muffins are golden brown and firm.
Remove from cups immediately; cool on wire racks.

Makes 12 muffins

These were a huge hit!

SPECIAL NOTE: Of course I used the little paper cups instead of actually greasing the muffin cups.
